Lignan sesaminol triglucoside is a bioactive compound in sesame milk. It has the potential for antioxidant activity enhancement. Lignan glucoside showed higher antioxidant activity after hydrolysis using beta-glucoside. Lactobacillus plantarum Dad 13 which was isolated from dadih, a traditional fermentation product of buffalo milk from West Sumatra, Indonesia was used as lactic acid bacteria.
